What is green banana flour?


Banana flour is light brown in colour with a natural, earthy and wholesome taste. It is a 100% natural gluten free product made from green Cavendish or ladyfinger bananas. Green banana flour can easily be substituted into any recipe that requires flour. Because the flour is made from unripe bananas (before the sugars come out) it isn't sweet and won't taint all your baking with a banana taste.

As I've recently been experimenting with green banana flour and totally loving it, I did a little research on it's origin and here is what I found. The fascinating and heart warming story of how green banana flour came about makes this product even more special.

When banana growers Krista and Rob accidentally ran over some bananas that had dried in the sun, what they stumbled upon was 'green banana flour' and later learned they were sitting on a super food goldmine.

In Queensland alone, there are 500 metric tonnes (500,000 kilos) of bananas going to waste every week. Sadly we as consumers reject produce that isn't the ideal shape or size leaving many farmers with no choice but to throw away incredible amounts of food.


Green banana flour has completely revolutionised food wastage in the banana industry, helping out farmers whilst providing an amazing product with health benefits.


The bananas completely exploded under the weight of the wheel, and what came out was a dry, floury substance.

4 Amazing Benefits of Green Banana Resistant Starch


Supports gut health. Resistant starch is a type of fermentable fibre. It promotes good gut bacteria and works as a prebiotic feeding the microbiome.


Nutrient dense. Banana flour is particularly high in minerals magnesium, potassium and zinc as well as vitamin E.


Good vibes. Resistant starch contains 5-HTP which when consumed is converted into Serotonin, a happy hormone. Serotonin is known in helping to maintain sleep, mood, libido, energy, and reduces anxiety.


Very low G.I. Unlike other starches, green banana flour starch doesn’t spike your insulin and will keep you feeling full for longer.

Where can I find banana flour?

Green Banana Flour Bites

Makes approx. 15 squares


Ingredients

  • 1 cup green banana flour

  • 1 cup walnuts

  • 1/2 cup cacao butter

  • 1/2 cup cacao powder

  • 1/4 cup + 1 Tbsp. maple syrup

  • 1/2 cup coconut cream

  • 2 tsp vanilla extract

  • 1/4 tsp. sea salt


Method


1. Pop all ingredients into a high speed blender and whiz until a smooth texture forms.

2. Place mixture onto baking paper and flatten out into a large square approx 1 centimetre thick (This mixture holds it form so you don't even need a baking tin).

3. Place in the fridge until set.

4. Cut into bit size pieces and store in the fridge/freezer.
