Gluten Free Rum Balls

These delicious little morsels are gluten and dairy free with no refined sugar. They are incredibly simple and easy to make with only six ingredients. They are the perfect guilt-free treat. They taste and smell just like Christmas.

I have managed to combine a few simple yet wholesome ingredients to mimic the traditional rum ball flavour, just without the wheat, dairy and sugar. The star ingredients making them taste like rum balls are raisins, cacao powder, desiccated coconut and of course a splash of rum. I used cashews as my base and sweetened them naturally with organic pitted dates.

Keep a batch of these rum balls in your freezer. They'll come in handy when you have nothing else to serve your expected and unexpected guests over the Christmas period. They'll be delighted. You'll even have your gluten free guests covered.


Depending on your taste buds you may like to add a little more rum. Personally, my taste buds are on the more sensitive side because I don't drink alcohol. If you find my suggestion is not enough for you, go ahead and add a little more, it's Christmas time!


Gluten Free Rum Balls

(Makes approx. 15)


Ingredients

  • 1 cup cashews

  • 1/2 cup raisins

  • 1/2 cup pitted dates

  • 1/4 cup cacao powder

  • 1/2 cup desiccated coconut + extra for coating

  • 1 tbsp rum


Method


1. Place all ingredients into a high speed blender or processor. Blend until mixture is sticky and wet. You may need to add a dash of water to help the ingredients combine.


2. Roll mixture into small balls, coat in the extra desiccated coconut and store in fridge or freezer.
