Gluten-Free Quiche Crust

Crispy, wholesome, and totally tasty. Quiche is one of our favorite meals and whilst the fillings may vary this is always my go-to crust. It's so easy, has a delicious crumbly texture, and is made from nothing but goodness.

For the filling, I will usually use seasonal vegetables, lots of fresh herbs, organic eggs, coconut cream, and a little goat's cheese to top it off. The variations are endless! If you are stuck for filling ideas, here are some of my favorite ingredients. Just make sure you saute any vegetables first before you add them to your quiche.

  • Onion

  • Garlic

  • Leek

  • Pumpkin

  • Sweet potato

  • Baby spinach

  • Silverbeet

  • Kale

  • Mushrooms

  • Tomatoes

  • Zucchini

  • Capsicum

  • Parsley

  • Basil

  • Goats cheese/fetta

Quiches are so flexible and easy! I love to serve them with a big beautiful fresh salad and some sauteed asparagus on the side. Yum!

Gluten-Free Quiche Crust


Ingredients
  • 1 cup buckwheat flour

  • 1/2 cup almond meal

  • 1/4 cup tapioca

  • 1/4 cup coconut flour

  • 100g butter (preferably organic)

  • 1 tsp dried thyme

  • 1/2 tsp quality salt

  • 1/4 cup water


Method
  1. Preheat oven to 180 degrees Celcius

  2. Place all ingredients into a food processor and blend into a dough-like consistency

  3. Press the dough evenly into a lined tart tin and prick multiple times with a fork

  4. Place in oven for 12-15 mins or until just golden
