This deliciously crunchy granola is perfectly sweet, satisfying and packed full of wholesomeness. It's completely grain free, nutrient rich and is infused with tasty warming spices. Serve it with yoghurt, your favourite milk or simply eat it on its own.
Whilst your traditional granola is based on oats, in this recipe we are giving the oats a miss and instead using extra nuts and seeds for a more fulfilling combination. It's naturally sweetened using coconut sugar which pairs beautifully with the spices cinnamon, ginger and turmeric. The granola is roasted in coconut oil and super easy to make.
This delicious granola is my current go-to-breakfast. I serve it with some organic greek yoghurt (coconut yoghurt is delicious too) and seasonal fruit. Jon, on the other hand loves to grab a handful each time he passes through the kitchen (he is chronic snacker). Needless to say it's been a hit in our household.
The turmeric gives the granola a glowing yellow tinge which along with cinnamon and ginger has anti-inflammatory and immune boosting properties. Ginger is also great for digestion.
So lets get to the recipe then shall we!
Cinnamon Ginger & Turmeric Spiced Granola
Ingredients
1/2 cup sunflower seeds
1/2 cup pepitas
1/2 cup shredded coconut
1/4 cup chia seeds
1 cup puffed buckwheat
1 cup raw cashews
1/2 cup cranberries
1/4 coconut sugar
1/4 cup coconut oil
2 tbsp cinnamon powder
2 tsp ginger powder
2 tsp turmeric powder
2 tsp vanilla extract/powder
Method
Preheat oven to 160 degrees
Place all ingredients except coconut oil into a large bowl and mix well
In a small saucepan melt coconut oil over low heat until it liquefies
Pour melted coconut oil over granola and mix until granola is completely coated
Evenly spread granola over 2 baking trays and bake for 15-20 mins or until golden brown, stirring granola occasionally.
Leave to cool completely and store in a glass mason jar
Serve with yoghurt or milk of choice + seasonal fruit & enjoy!
